Premium Olive Oil

HARVEST : The olives are harvested at their optimal ripeness using electric combs and collection nets, ensuring the utmost care for both the trees and the fruit. Immediately after picking, they are transported to the mill to preserve their freshness and delicate aromatic qualities.

The olives are then carefully washed, crushed and slowly malaxed at a low temperature. This cold extraction process preserves their natural compounds while revealing the full richness and complexity of their aromas. Once the ideal malaxation time has been reached, the oil is gently separated from the water and olive solids, resulting in an exceptionally pure extra virgin olive oil that faithfully reflects the unique terroir of Château Léoube.

AT THE TABLE : Perfect for enhancing salads, raw vegetables and light starters, this olive oil delivers remarkable aromatic complexity with elegant notes of fresh artichoke complemented by a subtle hint of Mediterranean herbs.

TASTING NOTES : Best enjoyed uncooked, it is delicious drizzled over garlic-rubbed toasted bread or used to elevate a tomato salad, artichoke hearts with Parmesan, or fresh goat's cheese. It also pairs beautifully with seafood carpaccios, including salmon, sea bream and scallops, bringing freshness and finesse to every dish.
