VINES
SOIL: A clever blend of land and sea, the “Singulier” cuvée identity is derived from the particular location of Château Léoube. Made from a small parcel of Sauvignon Blanc selected with the greatest care, “It was born from our desire not to remain frozen on traditional Mediterranean grape varieties. Above all, it expresses our desire to go ever further, to shake up codes and seek new alliances while remaining faithful to our identity,” says Romain Ott, head winemaker.
VARIETIES : Sauvignon blanc, Rolle, Ugni Blanc and Sémillon.
CELLAR
WINEMAKING: Like all of our organic wines, the harvest is done by hand. The grapes are transported straight to the cellar where they are pressed directly, where, the extraction of the juices is slow and delicate with temperature controlled fermentation in order to preserve the freshness of this wine. This is why alcoholic and malolactic fermentations are carried out in stainless steel tanks. Finally, the organic white wine is bottled in spring after natural clarification by deposit.
AGEING POTENTIAL: 2 to 5 years
SERVE
TASTING: Incredibly aromatic and mineral, it reveals a beautiful vivacity on the palate and a richness of complex aromas of white fruits.
SERVING TEMPERATURE: 10 – 12 °C
WINE PAIRING: With fish, shellfish, white meats, green vegetables and soft cheeses.
